In 2004 a graduate student in Eastern Michigan University's Hotel and Restaurant Management program had an idea for her thesis project that would prove to be prescient. She wanted to better understand the extent to which the fast food industry was recognizing the emergent trend of consumers wanting more healthy choices on the menu. The result was "Fast Food to Healthy Food: A Paradigm Shift," and the student's thesis went on to be published in 2006 in the International Journal of Hospitality & Tourism Administration. That student happens to be our show's tech guru and producer, Chef Carmela McTyre. She shares her thoughts about where things are today in these areas of healthy choices being provided in the fast food industry and also some thoughts on initiatives underway by First Lady Michelle Obama and Celebrity Chef Jamie Oliver to raise awareness about this important topic.
